Decaf has come a long way. The best specialty decafs use ethyl acetate (sugar cane), Swiss Water, or CO2 methods to strip the caffeine while keeping the complexity and sweetness of the original coffee intact. If you wrote off decaf years ago, try again.

Buying advice

EA (ethyl acetate) or sugar cane process decafs tend to be the sweetest and most origin-faithful. Swiss Water is excellent too, especially for darker roasts. If a roaster doesn't name the decaffeination method, that's usually a bad sign.
